Highlights from the Phan Thiet and wider Vietnamese repertoire include:

  • Mini rice cakes topped with minced pork meatballs, quail eggs, braised fish, and green mango.
  • Handrolls of finely ground pork seasoned with spices, wrapped in thin rice paper and served with fresh herbs, cucumber, and pickled vegetables.
