What is khao chae?
Literally meaning “rice soaked in water,” khao chae has been part of Thai cuisine since the reign of King Rama II. Known for its intricate preparation, it comprises four main components: par-boiled rice, jasmine-scented water, ice, and a variety of accompanying dishes.
At Devasom Hua Hin, the chefs enhance this dish using flower-infused water derived from homegrown bread flowers (dok chommanat) which are repeatedly smoked with fragrant candle smoke. The rice is carefully half-cooked, scrubbed to remove excess starch, and then steamed again to achieve a uniquely refreshing texture.
The cooked rice is served with a selection of flavorful side dishes, including bell peppers filled with minced pork, deep-fried shrimp paste balls, radishes stir-fried in coconut milk, shredded dried pork floss, and sweet Yee-Son fish. The dish is beautifully presented alongside intricately carved fruits and vegetables, a hallmark of Thai culinary art.
