This month, JW Marriott Goa offers diners a distinctive culinary showcase at its all-day dining establishment, JW Kitchen. Currently running till Saturday, June 14, JW Kitchen invites guests to explore the bold flavors and vibrant culinary traditions of China’s Sichuan province.

Sichuan cuisine is renowned for its fearless use of spices and aromatic complexity, making it a truly exciting culinary adventure. The limited-time menu pays homage to Chengdu, recognized as a UNESCO City of Gastronomy, providing a unique opportunity to savor this rich culinary heritage in Goa.

Set in a contemporary Goan beach house atmosphere, diners can enjoy their meals in both indoor and balcony seating, overlooking the scenic Chapora River and Fort. Live kitchens and interactive culinary elements amplify the experience by allowing guests to engage with the culinary artistry behind each dish.

The Fiery Flavors of the Land of Abundance The Sichuan region, often referred to as the ‘Land of Abundance’, is famous for its layered flavors and liberal use of chili, garlic, and Sichuan peppercorns.

The menu showcases a variety of dishes that encapsulate the boldness of Sichuan cooking while ensuring depth and balance. Notable appetizers include Chengdu-style prawns, stir-fried with burnt chili and scallions, delivering a perfect heat-umami combination.

Vegetarians can delight in the spicy mala mushrooms that offer a classic peppery sensation. Other highlights include crispy tofu in aged Shaoxing wine and Chengdu-style lamb, showcasing the rich culinary influences woven through China’s Muslim traditions.

Warm dishes like Mala Xiaomian-style Noodle Soup stir the senses with their spicy and numbing broth, accompanied by either soft hand-pulled noodles or spicy seafood peppercorn soup.

Main dishes like Wok-Fried Pork Belly with Mountain Chili provide a robust flavor experience, while the Sichuan Hot Pot Chicken captivates with its dry, aromatic intensity.

Vegetarians will also enjoy the Stir-Fried Tofu and Long Eggplant enhanced by Sichuan pepper and garlic sauce. The Dan Dan noodles, often celebrated in Sichuan street food culture, combine spicy minced meat with sesame, soy, and vinegar, culminating in a tangy finish.

The culinary journey concludes with inventive desserts inspired by Asian elements, including Mango Pudding Rice with Mango Ice Cream and Darsan with Jaggery-Sesame Gelato, creating a delightful bridge between tradition and innovation.
