Belmont Hotel Manila Celebrates the Culinary Heritage of Pampanga
A special dining event at Belmont Hotel Manila highlights the flavors of Pampanga during Filipino Food Month.
Throughout April, in celebration of Filipino Food Month, Belmont Hotel Manila showcases the diverse flavors of Pampanga with Pamana, a special weekend dinner buffet.
Supervised by renowned chef-entrepreneur Felix Niño Asuncion, this event encourages guests to relish Kapampangan specialties every Friday and Saturday of the month.
Located at Cafe Belmont, Pamana (meaning legacy in Filipino) honors one of the Philippines’ most cherished culinary traditions, introducing guests to unique ingredients, traditional cooking techniques, and rich flavors.
According to Asuncion: “Pamana is more than just a meal: it narrates our Filipino identity. Every dish reflects the legacy of those who preceded us, the land that provides for us, and the memories that shape our existence. With this buffet, I wish for guests to not only appreciate the richness of Kapampangan cuisine but also to connect with our heritage and the essence of our culture.”
Reimagining Culinary Classics
This extraordinary buffet includes elegant yet authentic Pampanga classics:
- Asadong Matwa: A sweet and savory slow-cooked pork stew, drawing inspiration from heirloom recipes.
- Begukan Babi: A rich pork dish simmered in bagoong (fermented shrimp paste) that showcases the bold taste of Kapampangan cooking.
These dishes embody the spirit of Pamana: a celebration of heritage passed down through generations, enriched by Chef Felix’s distinctive touch and culinary expertise.
Beyond Kitchen and Table
Every plate represents a story of Kapampangan identity, resilience, and innovation. More than a simple culinary event, Pamana signifies a commitment to sustainability and local sourcing. All ingredients are sourced from Filipino farmers, with an emphasis on mindful practices to minimize waste, supporting the communities preserving our culinary heritage.
