This summer, Anantara Villa Padierna Palace Benahavís Marbella Resort, a five-star hotel and member of The Leading Hotels of the World, is establishing itself as a gastronomic destination on the Costa del Sol. On Friday, July 11, beginning at 21:00, attendees will experience an unforgettable night featuring the demonstration of the “ronqueo” of a Balfegó red tuna weighing over 300 kilograms. Guided by an expert presenter, participants will gain insights into the various cuts of the fish, its culinary possibilities, and curiosities, in a visual spectacle that harmonizes tradition and precision. The healing technique of “ronqueo”, named for the unique sound the knife makes when it glides along the fish’s spine, showcases the excellence of this luxurious product.

After the demonstration, guests can enjoy a sea-front cocktail tasting with dishes specially designed for the occasion, serenaded by live flamenco music. The By The Sea Beach Club provides the perfect atmosphere for an unforgettable night with the sound of waves and Mediterranean breeze enhancing the experience.

The event will feature a culinary tour through the most delicious and surprising parts of the Balfegó red tuna, crafted into meticulous dishes designed to enhance its flavor, texture, and versatility. The carefully curated menu will include treats like cured tuna ham, assorted gildas, antequera porra with salted ijada, roasted pepper salad with confit galete, marinated tuna harmonica, tuna meatballs in tomato sauce, smoked pancetta tuna croquettes, and confit leeks with tuna and romescu.

Furthermore, in the weeks following the event, until July 27, the By The Sea Beach Club will include these creations in its dedicated red tuna menu, offering diners the chance to continue enjoying this exceptional product.
