At SO/Sotogrande SPA & Golf Resort, the Cortijo Santa María 1962 restaurant is set to delight discerning palates with the Tuna Festival, a three-month culinary experience that pays tribute to one of the ocean’s most valued treasures. Directed by Michelin-starred chef Nicolas Isnard, this festival becomes a sensory journey that blends technique, culture, and creativity.

The event starts with the Nikkei Menu, available until June 8, celebrating the fusion of Japanese and Peruvian cuisines. Here, tuna is presented in its purest form: raw, marinated, and delicately cooked. Dishes such as tuna ceviche with quinoa salad and white miso and sashimi with citrus tiger milk and mint offer a blast of flavors that balance acidity and freshness. This menu concludes with a sweet touch featuring cherry pavlova with dulce de leche, wrapping up this first stage on a high note.

From June 9 to July 20, the festival transitions to the Mediterranean Menu, coinciding with the arrival of tuna in the warm southern waters. The flavors of Andalusia intertwine with Isnard’s cooking, resulting in vibrant dishes like red tuna tartare from Barbate with pomegranate and arbequina olive oil and tuna cheek stew with chickpeas and smoked paprika. This menu honors the connection between sea and land, evoking the intensity of summer along the Cadiz coast.

The festival culminates from July 21 to September 14 with the Asian Menu, inviting diners to explore the more exotic roots of tuna. Featuring spices and ferments as the main characters, bold dishes like tuna rose and takuan in dashi broth and curry sauce confit cheeks showcase the technical mastery and aesthetics of Asian cuisine, adapted to the excellence of local products.

The Tuna Festival not only positions SO/Sotogrande SPA & Golf Resort as a culinary reference in the region, but also celebrates the versatility of tuna through various cultures and culinary techniques.
