Puro Sushi Expands to Puente Romano in Marbella

Puro Sushi opens a new location in the exclusive Puente Romano Resort in Marbella, offering a unique Japanese dining experience.

After delighting the most discerning palates since its inception in the heart of Marbella, Puro Sushi takes a significant step by launching a new venue at the exclusive Puente Romano Marbella resort. This restaurant joins the expansive culinary offerings of the hotel complex, providing an immersive experience for those seeking impeccable Japanese precision, outstanding products, and a harmonious blend of tradition, technique, and emotion.

Behind this project is Andrés Médici, a chef with an extraordinary background. He started his career in Buenos Aires over 25 years ago under the guidance of Iwao Komiyama, a pioneer of Japanese cuisine in Latin America. Later, Médici became the chef at the Guadalpín Hotel in Marbella, marking the beginning of his journey in Spain. In 2007, alongside his partner Ivana Boeri, the dining room director and a key pillar of the project, he founded Puro Sushi, opening its first location in Galicia. Years later, they returned to Marbella, establishing a restaurant in the city center that has become a benchmark for traditional sushi on the Costa del Sol and is now relocating to the Puente Romano Marbella. They have since continued their education, traveling to Japan to refine techniques and explore new culinary creations.

The story is further enriched by the presence of Agus Médici, the chef’s son and a vital team member. At just 23, he has already worked at Hakkoku, Tokyo (1 Michelin star), demonstrating that sushi here is more than just a technique; it’s a family legacy. In this new location, the offering expands without losing focus. It features an omakase bar for 16 diners per shift, where Andrés and Agus cook piece by piece at the moment, with a menu chosen by the chef that changes daily based on product availability.

“Nigiri continues to be the heart of our offering, but here we have more space to elevate everything. More grilling, longer maturation times, and an immense wine cellar that includes a wide variety of wines, whiskeys, and, of course, the best selection of sakes in Spain,” says Andrés. The experience goes far beyond sushi, as every detail is thoughtfully designed. The selection of handmade artisan sakes imported from Japan is the most complete in the country. Additionally, much of the tableware is handmade by Ivana, who, apart from directing the dining room, is also a ceramist. Regarding the ingredients, Médici states: “Many are sourced from Japan: seaweeds, rice, sauces, wasabi… But we also work with local produce because quality and how we treat it are what matters.”

With this new opening at Puente Romano Marbella, Puro Sushi not only reinforces its presence in Marbella but also elevates its offering to a new level. Technique, emotion, Japanese tradition, and familial spirit come together in a privileged setting, where every detail is crafted to pay homage to sushi in its purest form. A new direction, but the same philosophy: cook with respect, serve with soul, and create emotion bite by bite.
